PURAN POLI, Healthy & Delicious Sweet Rotis

Among the different Indian food preparations made by people from different states, one food that has many versions across North and South India, is the humble SWEET PARANTHA, also called PURAN POLI or SWEET POLI.

A common sweet prepared by women of South India, especially Maharashtra, this is a healthy, delectable wheat and jaggery based roti for festivals and pujas. Although it can be time-consuming, it will be much loved by your kids, and the combination of gram and jaggery is a nutritious option for the kid’s lunch box or an evening meal.

Below is a step-by-step picture tutorial on how it can be made;

INGREDIENTS :

To prepare Puranam (gram flour mixture):

1/2 cup Chana Dal | Kadalai paruppu

1/2 cup Jaggery

1/4 cup Cardamom powder

 For the Roti/ Poli:

1 tsp Oil

3/4 cup All purpose flour / Maida

1/2 tbsp Rice Flour

1/2 tbsp Sooji

1/4 tsp Turmeric

Salt

METHOD:

For the Roti/Poli:

Make a soft dough by mixing and kneading all the ingredients mentioned in  above, along with water. Once done, allow it to rest till the puranam is prepared. Make small ough balls out of this in the size of a lemon.

For Puranam:

1. Wash and pressure cook channa dal for 4 whistles, till it turns soft. Grind it to a smooth paste in a blender.

2, In a medium pan, add the ground channa dal, powdered jaggery and cardamom powder. Cook in low flame till all the three ingredients are mixed well. Now take a small ball of dough, slightly of a larger size to prepare the outer layer of the poli .

3. Next, take a clean plastic cover. Place the outer dough ball on it, pat it flat gently, shaping it into a small roti. Place a small ball of  puranam in the center of this roti and close the outer layer. Apply a little oil on the hand and pat the entire ball to flatten it to 5-7 inch diameter.

4. Now heat the dosa pan. Flip the plastic cover in one hand and carefully place the poli on the dosa pan.Drizzle 1/2 tsp of ghee or oil if needed. Cook till golden spots appear on some places. Turn and drizzle 1/2 tsp of oil. Cook until golden spots appear on the other side too. Repeat the process for remaining dough balls as well.

Make this tasty Puran Polis and store them for a day or two, they make for a healthy filling sweet.

CHEESE STICKS- Soft, melt-in-the-mouth & definitely yum!

Cheese and Bread are two foods that most children love. It may be the taste, their ability to munch into it or even the softness, but hand them these and they will be on it for hours.

Our recipe today combines these two ingredients to make a wonder dish, CHEESE STICKS. You can make them fresh or even store them for a couple of days. They make for wonderful options for snack boxes or even evening snacks, and since made at home, is packed with health and freshness.

Ingredients:

1 cup Maida/ All purpose flour

1 tsp Red chili flakes

Salt to taste

1/2 cup Cheese, grated

Oil for deep frying

Directions:

1. Begin by grating the cheese and when done, keep it ready.

 2. Make the chili flakes if you don’t have them ready.

3. In a bowl, take the flour, add chili flakes, salt and slowly add water to knead to a stiff dough.

 4. Pinch out small balls from the dough, dust it with flour and roll out into thin discs. Spread the grated cheese over one layer, completely cover with another rolled out layer.

 4. Press the top layer very firmly over the bottom and tightly roll them forward. You will end up with a roll, which you can again roll down to make sure the two layers are completely struck together.

5. Now cut out small cubes from the rope. Dust and press it down to get an oblong shape. You will have the cheese coming out. You can ignore and twist it round. Cheese sticks9

 6. Heat oil in a pan. When it is hot, drop these into it and fry on both sides. Cheese sticks11

 7. The cheese will not seep out, rather it helps the dough layers to separate. Cook on low flame to make sure all the layers are cooked to crispy texture. Once done, drain these on a kitchen towel and serve hot.

These CHEESE STICKS are a wonderful snack option for kids. You can even add some oats/ragi flour to the maida when making the dough.

NOODLE HEARTS, sure to vet your children’s appetite!

The familiar taste of maggi noodles, a new shape that grabs attention, the goodness of almonds – what’s not to like about these NOODLE HEARTS. If your kid won’t be intrigued by the shape, they will definitely by the taste. Make it for their lunch boxes or evening snacks, and you have one more food option that the kids will just never get tired of.

INGREDIENTS-

  • 1 Pack (100g/4oz) of noodles (Maggi or Ramen)
  • 2 tbsp. butter
  • 2 tbsp. Whole Wheat flour (atta)
  • ¾ cup milk
  • 1 carrot – grated (3/4 cup)
  • ¾ cup finely chopped cabbage
  • 1 tbsp. almond powder (8 – 10 almonds, ground)
  • Salt and pepper to taste

METHOD-

  1. Begin by boiling Maggi noodles in just one cup water on medium flame till the water gets absorbed
  2. Next, melt the butter in a heavy bottomed pan on low heat.
  3. Add flour into the butter and stir fry for 1 minute. Remove from heat and cool. Add milk next, stirring continuously till lumps dissolve and return the pan to heat again.
  4. Add carrots, cabbage, almond powder to the flour batter in the pan and cook till thick. Put a pinch of salt into it.
  5. Finally, add the boiled noodles to the pan. Cook for 2-3 minutes more and keep mixing the noodles gently. Do not mash the noodles.
  6. Cook till the mixture turns thick enough to be shaped into cutlets. Remove from heat. Cool.
  7. With oiled hands, make heart shaped cutlets and refrigerate overnight. Next morning shallow or deep fry.

INGREDIENTS-

  • 4 hard – boiled eggs
  • ¼ cup finely chopped onion
  • 2 tbsp. Very finely sliced green beans
  • 4 tbsp. grated cheddar cheese
  • 2 tbsp. corn starch
  • 2 slices bread – ground in a mixture to get one cup fresh breadcrumbs
  • ½ tbsp. salt, ½ tbsp. pepper
  • ½ tbsp. prepared mustard or 1 tbsp. mustard powder, 2 tbsp. tomato ketchup
  • Oil for frying

METHOD-

  1. Begin by grating the boiled eggs in a small bowl. Add in the onions, green beans, cheese, corn starch, salt, pepper, ketchup and mustard and finally add the breadcrumbs.
  2. Mix the mixture thoroughly and shape it into oblong rolls. When done, keep it aside.
  3. Heat oil in a pan and fry rolls, few at a time, on medium heat, till the rolls turn golden brown. Finally, drain them on absorbent paper.
  4. Serve these Egg Rolls as an evening snack with some sauce on the side.

SAVOURY LOLLIPOPS! Yes, you’re kids could get hooked onto them

There is lots and even more that has been said about packing for the kid’s lunch boxes. While many things are easy to do, not everything can be followed and most of them need  lots of prep. That is why, this delicious SAVOURY LOLLIPOP dish is a refreshing change. All it needs is Chickpeas to be prepped the previous day and everything else just comes together in a jiffy. Whats more, the way they look can get even the most stubborn eater hooked :)

INGREDIENTS-

  • 6 Ice cream sticks or wooden spoons
  • 1 cup boiled and mashed Chickpeas or Kabuli Channa
  • 1/2 cup boiled and mashed Potato
  • 1/2 cup chopped Spinach
  • 1/2 cup grated Carrot
  • 2 slices Bread
  • 2 tbsp Tomato Ketchup
  • 1/2 tsp Salt or to taste
  • 1/2 tsp Pepper powder or to taste

METHOD-

1. Break bread into pieces and put it in a mixer. Grind it well to get fresh bread crumbs. Remove it and place it in a bowl.

2. Put the chickpeas/ kabuli channa in the same mixer and grind to a paste.

3. Mixed boiled and mashed potatoes with chopped spinach, grated carrots, bread crumbs, ketchup, salt and pepper. Add the chickpea paste to this and mix well.

4. Make balls & insert a stick in each.

5. Flatten the ball on the stick.

6. Shallow fry on a non-stick skillet along with the stick in hot oil until golden they become golden brown in color.
