BREAD PIZZA- A Yummy Cheesy Twist

The last couple of days for most of us parents have been blissful, with holidays, traveling and relatives occupying the day. There was no school, and no added headache of what to prepare for breakfast or what to pack for next day’s lunch. With school now almost about to resume, all the headache starts once again; the early morning whining, the running about, rush in the kitchen and then off to school…….and we are sailing in the same boat.

Today’s recipe, is a twist to the children’s perennial favourite ‘pizza’, the BREAD PIZZA. Simple to make and quick to rustle up, it can even become your last minute lunch box option if you don’t have anything else on hand. Learn how to make this, by following the recipe below.

Ingredients:

  • Bread
  • Garlic
  • Black pepper
  • Dry oregano
  • Basil
  • Tomato
  • Cheese
  • Olive oil

Method:

1. Begin by slicing the bread into two and placing them in a baking tray. You can also cover the tray with aluminum foil and place the bread slices on it. Toast the bread in a preheated oven at 200 C for about 8 to 12 minutes or more, till they are lightly toasted and golden. The slices can also be easily toasted in an electric toaster or on a tava/griddle.

2. Next, heat 1 tbsp olive oil in a pan and add finely chopped garlic and sauté for half a minute on a low flame. There is no need to brown the garlic.

3. Add finely chopped tomatoes to the pan and sauté them till the tomatoes soften. Finally, add black pepper, dry oregano and basil, season with salt and stir everything well.

4. Then add sliced onions, steamed corn kernels and bell peppers, even veggies like sautéed mushrooms, baby corn, steamed potatoes, cherry tomatoes and olives to the pan and sauté for 3 to 4 minutes. The veggies need not be cooked through.

5. When the bread slices are lightly toasted, remove them from the oven.

6. Top the sauteed veggies on the bread slices. If you want you can also spread some butter/olive oil on the bread first and then top the prepared veggies, and finally dot the veggies with tomato sauce.

7. Sprinkle some grated cheese (amul, cheddar or mozzarella cheese) over the bread slices.

8. Place the tray back in the oven and bake at 200 C for 8 to 12 minutes or till the cheese melts or gets light browned.

9. Finally pack this Pizza Bread for your kid’s lunchbox or serve with red chili flakes, oregano and tomato ketchup for breakfast.

CHEESE STICKS- Soft, melt-in-the-mouth & definitely yum!

Cheese and Bread are two foods that most children love. It may be the taste, their ability to munch into it or even the softness, but hand them these and they will be on it for hours.

Our recipe today combines these two ingredients to make a wonder dish, CHEESE STICKS. You can make them fresh or even store them for a couple of days. They make for wonderful options for snack boxes or even evening snacks, and since made at home, is packed with health and freshness.

Ingredients:

1 cup Maida/ All purpose flour

1 tsp Red chili flakes

Salt to taste

1/2 cup Cheese, grated

Oil for deep frying

Directions:

1. Begin by grating the cheese and when done, keep it ready.

 2. Make the chili flakes if you don’t have them ready.

3. In a bowl, take the flour, add chili flakes, salt and slowly add water to knead to a stiff dough.

 4. Pinch out small balls from the dough, dust it with flour and roll out into thin discs. Spread the grated cheese over one layer, completely cover with another rolled out layer.

 4. Press the top layer very firmly over the bottom and tightly roll them forward. You will end up with a roll, which you can again roll down to make sure the two layers are completely struck together.

5. Now cut out small cubes from the rope. Dust and press it down to get an oblong shape. You will have the cheese coming out. You can ignore and twist it round. Cheese sticks9

 6. Heat oil in a pan. When it is hot, drop these into it and fry on both sides. Cheese sticks11

 7. The cheese will not seep out, rather it helps the dough layers to separate. Cook on low flame to make sure all the layers are cooked to crispy texture. Once done, drain these on a kitchen towel and serve hot.

These CHEESE STICKS are a wonderful snack option for kids. You can even add some oats/ragi flour to the maida when making the dough.

MOLTEN CHOCOLATE LAVA CAKE with step-by-step Pictorial Instructions

With a long weekend coming up, and kids going to be at home for a major part of the day, you must be wondering how to keep them and yourself busy and engaged. One plan we could come up with, is a yummy cake that both of you could prepare and eat together.

This Molten Chocolate Lava Cake recipe, is so simple, easy and quick to make and your family is sure going to absolutely love it. The best chocolate cake recipes are often times, the most simplest. Aren’t they?

Molten Choco Lava Cake isn’t as difficult as it might seem, and for those of us who can’t seem to have our fill of the MASTERCHEF (the show) series on television, it is a perfect dessert to try out in the kitchen which comes without the added pressures of being judged for it.

Ingredients

For Molten Lava Cake with Egg

  • 4 egg
  • 1/2 cup Butter
  • 3/4 cup Sugar
  • 1/2 cup All Purpose flour
  • 3/4 cup Chocolate
  • 1 tsp Vanilla extract.

For Eggless Molten Lava Cake

  • 1 cup Condensed Milk (used instead of the eggs)
  • 1 cup regular salted Butter
  • 1 cup All Purpose Flour
  • 1 cup Cooking chocolate
  • 1 tsp Baking powder.
  • 1 tsp Vanilla extract

Method- (In Pictures)

Step 1- Pour 4 eggs in a medium size bowl

   Step 2- Take 3/4th cup sugar

  Step 4- Mix the 3 ingredients with a blender

 Step 5- Take 1/4 cup regular salted butter.

Melt butter and dark cooking chocolate in a double boiler.

 Step 6- Grease the cupcake moulds with butter and dust them with cocoa powder.

  Step 7- Add the All Purpose Flour to the egg mixture and beat again

 Step 8- Blend all the ingredients properly

 Step 10- Pour the mixture into cupcake moulds and bake them at 145 F for 8-10 minutes (for Lava Cakes with Egg) and for 12 minutes (for Eggless Lava Cakes)
